Reading a Riesling

Lime, green apple, white peach and honeysuckle, with a mineral, sometimes petrol-like note in mature bottles, all carried by piercing acidity that keeps even sweet versions tasting fresh. German labels signal sweetness with terms like Trocken (dry) and Kabinett or Spätlese (lighter and riper off-dry styles); Alsace and Australian Rieslings are usually dry; Washington makes both.

Riesling ages remarkably well and is low in alcohol, often 8–12%, which makes it one of the most food-friendly whites made.

Pairing Riesling

Off-dry Riesling is the answer to spicy Thai, Sichuan and Indian food; dry Riesling suits pork, trout, roast chicken and choucroute. Serve at 45–50°F.
