Grapefruit, lime, green apple and gooseberry with cut grass, bell pepper or jalapeño notes depending on ripeness. New Zealand's Marlborough made the grape famous for its explosive passion-fruit style; the Loire Valley (Sancerre, Pouilly-Fumé) is more restrained and flinty; California sits in between, riper and rounder, sometimes with a touch of oak in the Fumé Blanc style.
Goat cheese is the textbook match. Also oysters and shellfish, grilled fish, green salads, asparagus, sushi and dishes with lime and cilantro. Serve cold, 45–50°F, and drink within a couple of years of the vintage while it is fresh.
