Pinot Noir is expensive to grow well, so it is rarely cheap and rarely discounted deeply. When a markdown does appear on a California or Oregon Pinot, it tends to be one of the best values in the shop. Under $20, favor producers who specialize in the grape; above it, coastal appellations bring the most character.
Pinot Noir is the red most often served too warm. Fifteen minutes in the refrigerator brings it to 55–60°F, where its cherry fruit and perfume come forward. It needs no decanting and pairs with salmon, roast chicken, duck and anything with mushrooms.
