What Merlot tastes like
Plum, black cherry and chocolate, with softer tannin and a rounder feel than Cabernet Sauvignon. Merlot ripens earlier and its skins are thinner, so the wines are approachable young. In Bordeaux it is the majority grape of Pomerol and Saint-Émilion; in California and Washington it makes plush, medium-to-full-bodied reds that are often the best value in the aisle.
