The Maipo Valley near Santiago is Chile's Cabernet Sauvignon heartland — structured, minty, cassis-driven reds that punch far above their price. Colchagua to the south makes riper Cabernet, Carmenère and Syrah. The cool Casablanca and San Antonio valleys near the coast grow crisp Sauvignon Blanc and Chardonnay. Carmenère, Chile's signature grape, is a softer, spicier cousin of Merlot with a distinctive green-peppercorn note.
