Barrels are the expensive part of Chardonnay. A rich, buttery, oak-aged style costs more to make than a stainless-steel one, so a discounted oaked Chardonnay from Sonoma, Santa Barbara or Burgundy's outer villages is the bottle to grab. Unoaked Chardonnay is the everyday value at any price.
Buy the rich, buttery style for roast chicken, cream sauces, lobster and corn; buy the crisp, unoaked style for white fish, salads and shellfish. Serve the oaked wine a little warmer, around 50–55°F, so its aromas are not muted; the unoaked one colder. Both are dry.
